New June is a micro-bakery and cake studio in Philadelphia created by Noelle Blizzard, cake artist and owner. The bakery is known for beautiful, colorful, vintage cakes with seasonal ingredients and unique flavor combinations. Think Marie Antionette meets Vintage 1930’s piping, meets Wilton Cake décor. While New June isn’t a bakery that touts being inherently Mediterranean-inspired, Noelle does have Italian roots, and her menu features a variety of Mediterranean flavors.

Cake all decked out with a cute little cake candelabra.
Among them, you’ll see olive oil & sour cream cakes, olive oil & citrus cakes, and lemon-scented vanilla cakes (using real vanilla bean!), with additions of Mediterranean-rooted flavor-makers like pistachio, halva, tahini, mascarpone, espresso, and rose. For my friend’s birthday cake, we were torn between three flavor options that were all too perfect, how could we choose?! Descriptions taken straight from the New June website below!
Choice #1: Raspberry, Vanilla Chocolate Chip, Milk Chocolate Espresso
Layers of olive oil vanilla sour cream cake studded with dark chocolate, espresso infused Valrhona milk chocolate carmelina French buttercream and housemade raspberry cardamom jam.
Choice #2: Cardamom Pistachio Cream
Layers of vanilla, rose and cardamom spiced cake, brushed with cardamom milk syrup, layered with pistachio-butter buttercream and chopped pistachios, frosted with a silky vanilla & rose Swiss buttercream.
Choice #3: Cookies, Tahini & Graham
Alternating Layers of buttermilk chocolate devils food cake and olive oil sourcream chocolate chip cake, tahini caramel, cookies & mascarpone whipped cream, buttery graham crumble and salty vanilla beam Swiss buttercream.
Can you see our conundrum? I left it up to the birthday girl to make the final call and she chose Cake #1. It was delicious, unique, and to my happy surprise, not overly sweet. It was light, fresh, and flavorful. We went with the 6-inch cake and got roughly 7ish servings from it, using the square slice-cut technique.
